Today I Made Potato Bread!
As a child one of my favourite afterschool treats was hot potato bread straight from the griddle. Any potatoes left over from dinner the night before would be kept to make these delicious buttery treats!
Today you can buy (well, in Irish shops anyway!) ready made potato bread but I don’t recommend it. It’s made from dried powdered potatoes (I think it’s called ‘reconstituted’) and it’s horrible stuff.
However, real potato bread is really easy to make:
8 oz of warm, mashed cooked potato
2 oz plain flour
1oz melted butter
generous pinch of salt
mix the butter, salt and potatoes together, then add the flour until the dough is nice and pliable.
Divide the mixture in half, and roll each half into a thin pancake shape, about half a centimetre thick and roughly the size of a sideplate. Cut into quarters.
Use a hot griddle or frying pan - something decent with a heavy base. Some people add grease, some people add a sprinkling of flour. I have a non-stick frying pan so don’t bother with either. Cook on each side until golden-brown, shouldn’t take any more than 5 mins.
Serve hot with a knob of butter.
